Anzac Cookies
What would Anzac Day be without a batch of these family favourites?
I might just give this Donna Hay recipe a go.
anzac biscuits- 1 cup (90g) rolled oats
- 1 cup (150g) plain (all-purpose) flour
- ⅓ cup (150g) caster (superfine) sugar
- ¾ cup (60g) desiccated coconut
- 2 tablespoons golden syrup
- 125g butter
- 1 teaspoon bicarbonate of (baking) soda
- 2 tablespoons hot water
Preheat oven to 160°C (320ºF). Mix the oats, flour, sugar and coconut in a bowl. Place the golden syrup and butter in a saucepan over low heat and melt. Mix the bicarbonate of soda with the water and add to the butter mixture. Add to the dry ingredients and mix well. Place tablespoons of the mixture, leaving space between each one for spreading, onto baking trays lined with non-stick baking paper and flatten to about 7cm in diameter. Bake for 8–10 minutes or until a deep brown. Cool on trays for 5 minutes, then transfer to wire racks to cool completely. Makes 28.

Raspberry Yoghurt Pops
These look like a delicious summer treat!
Raspberry & White Cherry Yogurt Pops
Ingredients:
Raspberry & White Cherry Yogurt Pops
Ingredients:
- 2 cup raspberries
- 2 tbsp sugar
- 1 cup white cherries, pit removed, chopped
- 1 tbsp. lemon juice
- 1/4 cup superfine sugar
- 1 1/4 cups full-fat yogurt
- Place the popsicles moulds in the freezer.
- Add the raspberries and sugar to a blender and pulse into pureed. Strain through a fine sieve and pour into the bottom of the popsicle moulds.
- In a clean blender, add in the white cherries, lemon juice, superfine sugar and yogurt and puree.
- Once the raspberries have been in the mould for about an hour, add in the white cherry yogurt mix on top and freeze until cold.
- Run warm water over the sides of the moulds to release the popsicles. Serves 6.Melissah xox

You are my sunshine!
Talk about sunshine!
We had an unexpected heat wave yesterday
and temperatures hovered at 37 degrees.
My amazing strawberry ripple, double layered, cream and macaron covered
birthday cake had trouble coping with the heat
~ as did a few of our guests!
Namely my kids,
who were just hanging out to get to the beach.
So as soon as guests departed - we grabbed our towels
and headed to the ocean for a cool dip.
Thanks for all your lovely birthday wishes yesterday
- I so enjoyed reading them all
~ a perfect ending to a wonderful birthday!

Homemade Chocolate Ice-Cream
Now this really is a summer treat.
Rich, velvety, dark chocolate homemade ice-cream.
This is bound to be a huge success at your next summer barbeque or get together.
Serve it up in a waffle cone for extra fun!
This chocolate ice cream is smooth and creamy
- a great base for a multitude of combinations.
Why not added some chopped up Bounty for a tropical feel
or some macadamia nuts for some extra crunch!
Dark Chocolate Ice Cream
Ingredients
2 c. half and half
1 1/2 c. whole milk
1 c. heavy cream
1 c. + 2 tbsp. sugar
hefty dash of sea salt
1/2 c. unsweetened dark cocoa powder
3/4 c. dark chocolate, chopped
4 egg yolks
1 1/2 tsp. vanilla extract
How to -
1. In a heavy bottomed sauce pan, combine half and half, whole milk, heavy cream, 1 cup of sugar, and salt. Whisk to combine. Give it a little taste to make sure you have enough salt.
2. In a bowl, whisk together well the egg yolks and 2 tablespoons of sugar.
3. Over medium-high heat, heat milk mixture until sugar dissolves and begins to simmer. Stir in cocoa powder and chopped chocolate until combined. Bring back to simmer.
4. Slowly pour about one cup of the simmering milk mixture into the egg mixture, whisking constantly to temper the eggs (a.k.a. cook the eggs without scrambling them). Add egg mixture to saucepan, stirring occasionally for about 5 minutes until thickened. Remove from heat. Add vanilla extract.
5. Pour mixture through a strainer into a large bowl. Cover and let cool to room temperature. Place in fridge for about 3 hours. To speed up the cooling process, place bowl in an ice bath in the fridge, or place in the freezer sans ice bath until chilled.
6. Once mixture is cold, make ice cream according to your machine’s instructions.

Holiday Treats
With summer on our doorstep and kids on school holidays I am always on the lookout for fun, holiday treats for special occasions. Our house is normally free of biscuits, cookies, chocolate and sweets but every once in a while I will whip up a batch of something yummy for a special treat. It's usually because we are going on a picnic or have visitors. A few of the kids all time favourites are homemade ice-cream, chocolate chip cookies. chocolate crackles and caramel slice is my personal fave!.

Mango Surprise
Nothing says summer like a rich, juicy mango.
With their sweet fragrant flesh they are one of summer's jewels.
Refreshing made into a sorbet or a gelati,
healthy and nutritious in a smoothie
and perfect simply on it's own.
